Instructions

    Heat a large pot of salted water to boiling and cook pasta until al dente.

    While pasta cooks, melt butter in a skillet over medium heat and sauté minced garlic for 30 seconds.

    Add diced mushrooms and cook for 5-7 minutes until golden and liquid has evaporated, stirring occasionally.

    In a separate skillet, cook guanciale over medium heat until crispy, about 6-8 minutes, then transfer to paper towels.

    In a bowl, whisk together egg yolks, whole eggs, Pecorino Romano, and 1 teaspoon black pepper.

    Reserve 1 cup of pasta cooking water, then drain pasta.
