Instructions
- 1
Prepare the chicken: Place chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness using a meat mallet. Season both sides with salt and pepper.
- 2
Set up the breading station: Place flour in a shallow dish. Beat eggs in a second dish. Combine breadcrumbs, 1/2 cup Parmesan, garlic powder, and oregano in a third dish.
- 3
Bread the chicken: Dredge each chicken breast in flour, shaking off excess. Dip in beaten eggs, then press into the breadcrumb mixture, coating both sides evenly.
- 4
Preheat oven: Set oven to 425 degrees F (220 degrees C).
- 5
Pan-fry the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Cook breaded chicken for 3-4 minutes per side until golden brown and crispy. Transfer to a baking sheet lined with parchment paper.
- 6
Prepare the sauce: In a small saucepan, heat 1 tablespoon olive oil over medium heat. Add minced garlic and cook for 30 seconds. Add marinara sauce and red pepper flakes. Simmer for 5 minutes.
- 7
Assemble: Spoon marinara sauce over each chicken breast. Top with shredded mozzarella and remaining Parmesan cheese.
- 8
Bake: Place in preheated oven and bake for 15-20 minutes, until cheese is melted and bubbly and chicken reaches an internal temperature of 165 degrees F.
- 9
Garnish and serve: Remove from oven and top with fresh basil leaves. Let rest for 2-3 minutes before serving.
Tips
- •
Pound the chicken to even thickness so it cooks uniformly.
- •
Don't skip the flour step -- it helps the egg wash adhere to the chicken.
- •
For extra crunch, mix panko breadcrumbs with Italian breadcrumbs.
- •
Serve over spaghetti or with a simple side salad and crusty bread.
- •
Leftovers reheat well in a 350 degree F oven for 10-12 minutes.
